Recipe: Low-Carb Cottage Cheese Cake

I love sweets. And I can tell, with my 8 years experience, the sweets (sugar) is the Achilles heel of many of us. I won’t lie: for me too. I have to really push down my sugar intake. This is why I had to learn to bake for myself delicious and nice sugar-free sweets. Now I wanna share with you my big favourite one: Cottage Cheese Cake.

High protein, low fat and carb!

I love this cake because it is full of with casein (slow break-down protein source) and good quality low carb and fat. Easy to bake it, trust me. If I can do it, you too!

What do you need for the Cottage Cheese Cake?

Pastry:
  • 300gr Oat
  • 200ml lactose free milk
  • 4 eggs
  • 2 tsp Stevia
  • 1 tsp Vanilla extract
 Cream:
  • 500gr Cottage Cheese (creamy one, German style)
  • 50gr Vanilla Protein Powder (I use lactose free)
  • 4 tsp Stevia
  • 1 tsp Vanilla extract
  • 4 egg white
  • optional: forrest fruits
  1. STEP: mix the pastry ingredients in a bowl. The texture should be not too liquid and not too dry.
  2. STEP: put the pastry mass into a bake form (should be about 5-8mm thick the pasty in the form) and put it into the oven for 20 minutes in 180C.
  3. STEP: during the pastry baking mix the cream ingredients in a bowl. The texture should be not too liquid and not too dry.
  4. STEP: take off the pastry and put the top of it the cream mass. Bake it together for 40 min more in 180C. Check the cake after 30min baking: if top of the cake start to be brown, turn off the oven.
  5. STEP: wait until the cake will be room temperature and slice it.
